Herb-Crusted Salmon with Sauce

This is a great 30 minute meal, very tasty and it looks very impressive.  It packs a lot of flavor without a lot of fuss (although it makes an elegant meal worthy of guests you want to impress- or for your spouce for special occassions- such as eating a meal together minus the kiddos!)  Enjoy!

Herb Crusted Salmon with Roasted Red Pepper Cream Sauce


Ingredients:
Herb Crusted Salmon:
1 1/2 lb. salmon fillets (thawed)
2 T honey Dijon style mustard
Italian seasoned bread crumbs or panko crumbs

Roasted Red Pepper Cream Sauce:
1 T honey Dijon style mustard
1 cup heavy whipping cream
1/2 cup of roasted red bell peppers- drained and chopped

Instructions:
Preheat oven to 400 degrees F.


Rinse and pat salmon dry. Place into a sprayed baking dish. Spread mustard over the top of the salmon and sprinkle lightly with seasoned crumbs. Bake for 20-25 minutes until salmon flakes easily.


In a small sauce pan bring cream sauce ingredients together to a low boil, reduce heat and simmer for 15 minutes.

Serve salmon with sauce drizzled on top.

Cheesy Roasted Asparagus

Ingredients:
1 lb. fresh asparagus (trimmed)
2 T extra virgin olive oil
1 t salt
1 t pepper
1/4 cup grated parmesan cheese
fresh parmesan optional

Instructions:
Preheat oven to 400 degrees F.


Rinse and trim asparagus. Place in dish and drizzle with oil and sprinkle salt, pepper and grated cheese on top. Toss to coat and spread out on a cookie sheet. Sprinkle with fresh parmesan, if desired. Bake for 10-12 minutes.
